Wow! Palo Cortado is a rare drink, but surely when it is made well it is the king of sherries? Beginning its life under flor - like fino or manzanilla - then ageing oxidatively for the remainder of its 20 years. There is the bright, dry nuttiness of fino - salty even - but underpinned by deeper, more brooding rancio notes. It’s dry, but multi-dimensional.
