Our Verdict
“A partial wild ferment on gross lees was undertaken in old French barriques to provide texture, and funk, and to help balance the high acid profile of the fruit form two elevated sites. The balance of the juice was fermented in stainless steel to maintain freshness. The two parcels were blended post ferment, with the wild nature of the barrel ferment complementing the steely resolve of the tank component. Lemon verbena, chamomile tea, and apple blossom jostle for prime position in the aromatics, while the palate has green apple flesh, lemon rind and a slightly creamy texture broadened by lees.
