Single malt. Single cask. Small batch.
Hillwood's single malt, single cask releases are carefully handled and nurtured by the Herron family, which consists of master distiller Paul Herron and his three sons (triplets): Daniel, Joel, and Oliver. Each whisky is bottled at cask strength and only 20-40 bottles are made each batch. The whiskies have picked up numerous awards, with the Sherry Cask recently picking up Best Australian 12-years & under Single Cask Single Malt Whisky at the World Whisky Awards 2023.
Pinot Noir Cask: Elegant and delicate with notes of red berries, citrus, and spice.
