Our Verdict

The Dhillon label is a new project from Bindi - Riesling, Chardonnay and Rosé from the Macedon Ranges.

"This new project allows us to extend the fun we are having interpreting dry and textured Rosé styles. This Merlot and Shiraz based Rosé from cold climate fruit shows the elevation, granite soil strength and winemaking search for fragrance and texture.

Aromas of red roses, red currant and ripe strawberry with a touch of cream and spice adding a little more complexity than may be expected. The palate is fresh, cool, moderately intense and fine and shows very good length. Certainly delicious now, it will drink well for the next few years (weeks?!)." Winemaker notes
