Our Verdict

The Dal Zotto family kind of leads the pack when it comes to Australian Prosecco. Col Fondo, the style, is Prosecco that has undergone its secondary fermentation in the bottle, like champagne. But unlike champagne it isn’t disgorged from its lees, so you get some sediment, some cloudiness, and a heap more texture and flavour than your more traditional Prosecco. Dal zotto, naturally, does an awesome version.
