Produced in the traditional Champenoise method from Pinot Noir (40%) and Chardonnay (60%) grapes and aged for over 5 years on lees. Disgorged February 2022.

"A pale bright straw hue declares delightful elegance, restraint and tension, perfectly led by the white fruits of Chardonnay and well supported by the perfume and red fruits of Pinot Noir. Maturation in old barrels does nothing to disrupt its purity, and everything to build layers of creamy texture, harmonising perfectly with cool Tasmanian acidity and fine-tuned low dosage.
