Belgian-born Michel Couvreur is celebrated for his unconventional approach to whisky maturation, ageing Scotch in the heart of Burgundy at Bouze-lès-Beaune.
The limited release Sour’hum is a remarkable (and rare) single cask rum release and to say we adore it is an understatement. It is a masterful expression of artisanal craftsmanship, marrying Caribbean distillation heritage with the refined aging traditions of Burgundy, France.
Distilled in 2013 and bottled unfiltered at its natural strength of 50.5%, this High Esters Rum spent 12 years maturing in extremely old Pedro Ximénez casks, absorbing their deep, syrupy complexity. The result is an amber spirit brimming with pastry-like sweetness, bright acidity, and layers of rich, evolving aromas. Full-bodied and long on the palate, Sour’hum embodies a truly unique house interpretation of rum: artisanal, expressive, and without comparison.
