It isn’t cheap, but Paradigm Hill just might make the best rose in the country. It’s a wine of delicacy, but also structure and intensity; made for food. Produced from estate-grown Mornington Peninsula Shiraz fruit, its layers of Tess true have been built by skin contact (eight hours), fermentation and ageing in barrel, and judicious lees work. It is a tremendous wine.
