The family owned and independent Bollinger House makes one of the best and most reliable oak aged Champagnes on the market. The delicate assembly of the expression of a harvest and a majority of reserve wines, some of them held in magnums for between 5 and 15 years.
Bollinger Special Cuvée is composed of over 85% Grand and Premier crus of the three main Champagne varieties: 60% Pinot Noir, 25% Chardonnay and 15% Meunier. It is cellar aged for twice as long as required by appellation regulations. It is moderately dosed at between 7 and 8 grams per litre.
Surely the most underpriced champagne on the market today, yet one of the most complex. The 60/25/15% pinot noir/chardonnay/pinot meunier blend is of scant importance compared with the 400 components with 60% reserves, the oldest 8+ years old.
